Posada Sierra de Ibio
Charming countryside accommodation in rural Cantabria
Chapter 19/10/2019
Posada Sierra de Ibio
I recently shot a promo video here and I stayed in the Posada for a week while doing so. It was the end of October so the sun in Northern Spain Cantabria is a bit like playing blackjack. One week the sun could be shinning and the next, well let's just say I got dealt a hand of rain, floods, and a day of sun. Knowing the season I was going to shoot in I knew there were two mindsets I could choose from,
1. It's going to be raining... :-(
2. It's going to be raining! :-)
I had a think about it and I thought what better way to see the wild coast than when the winds are blowing? And what better way sleep in an historic countryside cottage than when the rain is pouring, the lights are dimmed and the doors open to the sound of the rain, I choose option #2
The first room I stayed in was a dream come true, as much as I love that fresh modern style I really loved this rural cottage feeling that the Posada has. The energy of the place is tranquil, the air is easy to breathe and I haven't slept this well for years. It takes a very certain place for me to be put out like that, I'm talking quality sleep, some days even 10 hours and feeling revitalised. Even if you don't want to come to Cantabria you should book a room here in the winter for sleep therapy.

I hired a car from Santander airport from the company Sixt. The car was a VW polo which was €155 for 5 days, gas was really cheap priced at only €33 and I was driving about 2 hours or more every day while exploring the area.

I always say following your passion and creativity will lead you to unexpected places and I will forever sick by that, my work leads me to places I would never have found and genuine people I would never have met. The guys at the Posada became a family to me by the end of the trip and I will return in the sunshine for part 2.

La Posada Sierra de Ibio is set in rural Cantabria about a 30-40 minute drive from Santander airport which is a quick easy drive along well maintained roads. Once you get off the main road and make your way over the first bridge heading towards Ibio you will be away from all distractions and will be able soak up the country, there are many beautiful buildings, old churches and mountain ranges along the way. To the right you will see the hills have the jagged shape of a saw, hence the name Sierra meaning saw in Spanish.
All of the food that I ate at the Posada was incredible, fresh local produce is supplied from every corner, eggs, meat and vegetables, so this instantly gives a taste of high quality. Oscar prepares all of the dishes & desserts on site and makes the most incredible soups from the fresh vegetables gifted from neighbours in the village. While we were eating so many people were asking Oscar for the recipe, most of these recipes were passed down though his family, as Oscar told us how he used to help his family prepare the meals during his childhood. During the day I would explore the surrounding areas and try their local cuisine, all of the recommendations were given to me by Jordi and they were all outstanding including pizza, rabas, lamb, tapas, the list goes on. The wine was excellent, there was zero disappointment here.
A famous Cantabrian dish called Rabas.

Rabas are similar to calamari rings but what makes them special in Cantabria is the chewy texture.

This is because the squid are always fighting the strength of the ocean, Cantabria's coastline being one of the wildest and roughest in Spain.

THE COAST
Cantabria's dramatic coastline
A Posada in Spanish is like a cottage or countryside home as we know in english.
One of the buildings is 200 years old and you will notice the huge solid slabs of wood that are still used as beams and pillars, when you enter towards the reception you will notice a smooth chunk of the original stone missing, I'm not going to tell you why it's like that but take a guess and ask Jordi if you run out of ideas. Many years ago the ground floor in this building would have been used as a barn for the animals and the family would have lived upstairs, all of these farm style houses were designed like this, as time moved on these spaces were converted into what you can see today and now used as living spaces. This was an area occupied by military in the early days and there are military owned horses that still live here today, reason being is the grass in this region is considered some of the best grass that grows in Spain, the horses here are strong and built with stamina. As you drive into the Posada the first building on the right was a military watch tower that dates back to the 17th century, the base of this building is still from the original tower which is still very visible to the eye.
